TZATZA means small fish in Bulgarian. It is often served fried, with cold beer during the summer on the Black Sea coast in Varna, where I grew up. Varna is an ethnically diverse costal city that has been continuously populated for thousand of years.
This collection is inspired by the long summer days, filled with sandy beaches, smell of salt and seeweed, and tomato sandwishes with feta cheese.
I dedicate this to the men in my family - fishermen, seamen, and navy officers, who all loved and made a living from the sea.
My father used to dive inot the seas with a harpoon and bring out fish and mussles. Sometimes we cooked them right there, on the beach over a tin on an open fire.
